A good paella can be a party changer.  It’s perfect for summer entertaining.

All over Melbourne throughout November and December we’ve been feeding the phenomena that is ‘the office Christmas party frrrrenzy’.  And paella wins the popular party vote!

When you are feeding a crowd we recommend tipping your hat to the Spaniards.  They do after all know a thing or two about fun and there’s no better way to feed a crowd…………….. except maybe with an EDFD gourmet Aussie BBQ!

A hot tip for Christmas from our Chefs: The perfect Christmas day pork!

To make the best pork crackling our chefs consult the Chinese.  They have an ancient method that involves firstly scoring the skin with a sharp knife, and then poring over boiling water. After, leave it uncovered in the fridge for 24-48 hours.  This dries out the skin.

The Chinese actually hang their pork in the open air for days! Once cooked, this method produces juicy tender meat and a really crispy and crunchy crackling.
Great for Christmas Day!
